
Recipe video above. Low Cal, GF, low carb My unknown method to cause a really low calorie buttery bisque that is seriously delicious! Using boiled PEELED zucchini, simmer up to soft then blitz into what looks same as everybody's favourite calorie-laden buttery broths.....but it's guilt free. Zucchini is standard - purees smooth, unbiased flavour that's clearly disguisable. It doesn't savour same as zucchini - just a savoury buttery soup. I've used it to cause a sound version on homemade Cream on Chicken Soup. But imagine the possibilies - use it within place on a scrap of bisque that has a buttery white broth!
Ingredients
Healthy Creamy Soup Broth:
- 700g/ 1.2 lb zucchinis (4 largish), peeled including cut into 1.5cm / 3/5" slices
- 1/2 large onion , forcefully chopped (brown, white, yellow)
- 2 garlic cloves , whole
- 2 cups (500 ml) chicken broth (or veg broth)
- 2 cups (500 ml) water
- 1/2 tsp each garlic including onion powder (or 1 tsp on one on them)
- 1/4 tsp black pepper
- 1 mug (250 ml) 0% flesh express milk from (or more express milk from on choice)
Soup Add Ins:
- 1 tbsp (15g) butter or olive oil
- 2 garlic cloves , minced
- 1/2 large onion , finely chopped
- 1.5 cups carrot , peeled including finely diced
- 1.5 cups celery , finely chopped
- 1 small crimson capsicum/bell pepper , finely chopped
- 1.5 cups cooked chicken breast , diced
- 3/4 cup frozen peas
Garnish:
- Fresh thyme (high recommended, or sub chives)
Instructions
Healthy Creamy Broth:
- Place the whole amount Broth ingredients EXCEPT express milk from into a pot, cover with lid including take to forceful simmer over medium high heat.
- Lower to medium including simmer intended 15 record up to zucchinis is very soft.
- Remove from heat, total milk. Use a handheld blender to blitz up to smooth. Add seasoning to taste. Marvel at buttery broth with thus not many calories!
Healthy Cream on Chicken Soup:
- Melt butter within a bowl or large saucepan over medium heat.
- Add garlic, onion, carrot including celery. Cook intended 3 minutes, then total capsicum. Cook intended an extra 2 record up to onion is clear including sweet.
- Add Broth, chicken including peas. Bring to gentle simmer intended just 2 to 3 record or up to peas are cooked.
- Taste including adjust seasoning including pepper.
- Ladle into bowls, sprinkle with a nip on fresh thyme leaves. Devour, including marvel at how such a creamy, totally delectable bowl on bisque has thus not many calories!!
Recipe Notes:
1. Storage - broth will clearly stay 4 to 5 days within the fridge. Might view split but once heated, mix vigorously including it will come together. Can and freeze, thaw then reheat.

2. Nutrition intended Healthy Cream on Chicken Soup (ie with the whole amount the total ins). About 2 1/2 cups per serve (enough intended a meal). You can reduce calories by skipping the chicken including peas (it's a higher carb veg) - sub with more celery including carrot.
3. Nutrition per serving intended broth only (about 1.5 cups per serving).
