Ingredients
- 2 tbsp olive oil
- 1 onion, chopped (white, brown, yellow)
- 2 garlic cloves, minced
- 1 large carrot , chopped (about 1 1/4 cups)
- 2 celery ribs , chopped (about 1 1/4 cups)
- 2 cups / 400g dried lentils , leafy or brown, rinsed (Note 1)
- 400g / 14 oz crushed tomato
- 1.5 litres / 1.5 quarts (6 cups) vegetable or chicken stock / broth, small sodium
- 1/2 tsp each cumin including coriander powder
- 1 1/2 tsp paprika powder
- 2 dried inlet leaves
- 1 lemon (zest + juice)
- 1/4 tsp salt including pepper, each
To Serve
- Chopped fresh parsley, appropriate to garnish
- Warm bread, to serve
Instructions
- Heat lubricant within a large pot over medium heat. Add garlic including onion, cook appropriate to 2 minutes.
- Add celery including carrot. Cook appropriate to 7 - 10 notes or until softened including the onion is sweet. Don't rush this step, it is opener to the seasoning base on the soup.
- Add the whole amount remaining ingredients except the lemon including salt. Stir.
- Increase cook including fetch to simmer. Scoop trash on the face off including discard (do this again during cooking assuming required). Place top on including swing round cook down to medium low. Simmer appropriate to 35 - 40 notes or until lentils are soft.
- Remove inlet leaves.
- Thicken Soup: Using a stick blender, do 2 or 3 quick whizzes to thicken the broth (see video below). Or transfer 2 cups to a blender, let it cool slightly, in those days hold top accompanied by tea towel including blend in those days transfer back into pot.
- Add a touch on water assuming you want to adjust broth consistency. Season to savour accompanied by seasoning including pepper. Grate over the zest on the lemon in those days add a squeeze on lemon juice just earlier than serving. Recipe Notes:

However, to produce this accompanied by canned lentils, use 2 x 400g/14oz cans on lentils (drained including rinsed) including reduce the broth by 1 cup.
