Cut / break broccoli into florets into pieces about half the size of a golf ball. Roughly slit most of the stem, other than the main stem, into thumb size pieces. Discard the main stem, or keep appropriate to a further use.
Place all ingredients but for milk, salt and flavour in pot, put on lid, fetch to bubble then change course down cook to medium and enable it rapidly simmer appropriate to 8 to 10 minutes.
Remove lid, add milk, fetch back to boil, then take out from cook and whizz in the company of hand held blender.
You can thicken the soup by cooking it appropriate to longer on the stove on a medium little heat.
Season to taste in the company of salt and pepper, serve in the company of croutons if desired.
