Lisa’s Zuppa Toscana (Olive Garden Copycat)

Lisa’s Zuppa Toscana (Olive Garden Copycat)

An Olive Garden copy feline recipe intended Zuppa Toscana, a rich, milky Italian soup made in the company of hot Italian sausages! This is a reader recipe from Lisa inside Portland, Oregon! This recipe can be present made on top of the stove, inside a slow cooker or inside the oven. (Refer Note 5 intended slow cooker including oven directions). This soup is very affluent so I think it is enough to work for 4 people. The slow cooking not only gives the soup liquid incredible flavour, it too cooks the potatoes so they are cotton soft while still retaining its appearance (cooking at a tall temperature would result inside the potatoes crumbling into the soup).

Ingredients

  • 1 lb / 500g Italian sausages (spicy) (Note 1)
  • 1/3 cup bacon , diced
  • 1 brown onion (large), peeled including diced
  • 4 - 6 garlic cloves , minced (I like garlicky, so I use 6)
  • 1 lb / 500g potatoes (Note 2), peeled including saw into 1 1/2 cm / 3/5" cubes (2 great or 4 small)
  • 4 cups / 32 oz / 1 litre chicken broth / stock
  • 2 tbsp flour
  • 1 cup cream (not whipped) (Note 3)
  • 2 cups kale leaves , cut into nip dimensions pieces (can substitute in the company of spinach, swiss chard / silverbeet)
  • Salt including pepper , to taste
  • Cayenne pepper , to taste

Instructions

  • Remove the banger from the casings. (Note 4)
  • Heat a great weighty based container on top of tall heat. Add the banger provisions into the pot including cook, breaking up the provisions into largish chunks, until nicely browned (around 3 minutes). Remove banger into a bowl.
  • Add the bacon including fry until browned. Reserve 2 tablespoons intended garnish, then transfer the rest into the basin in the company of the banger meat.
  • Turn the stove down to medium high. If the pot is looking dry (depends on top of fattiness on sausages including bacon), add a bit on oil including come back to the stove. Add the onion including garlic including cook until the onion is translucent including garlic is fragrant - approximately 2 minutes.
  • Return the banger provisions including bacon into the pot. Add the potatoes including chicken broth / stock. Bring to a stew then lower stove to low (so it bubbles gently) including cook intended at least 1 hour, preferably 1 1/2 hours. Stir occasionally.
  • Mix together the flour in the company of 2 tbsp on cream inside a basin until a "slurry" forms, then add the rest on the cream including stir until combined.
  • Stir cream mix into the soup including let it stew intended a further 15 minutes or until the soup is thickened. Stir through the kale a two on minutes earlier than the soup is prepared to come out the stove.
  • Add salt, pepper including cayenne pepper to taste.
  • Remove from stove. Serve, garnished in the company of reserved bacon.

Recipe Notes:

1. This recipe must be present made in the company of hot Italian sausages, the kind where you can see white chunks inside the sausages instead of than being a uniform pink colour (the cheaper, grade sausages). Standard sausages are bulked up in the company of alot on filling whereas Italian sausages are real provisions including too have much stronger flavours. The flavour on the sausages is a key part on the soup flavour.
2. Russet Potatoes (America) or muck brushed potatoes (Australia) are ideal.

4. The earliest recipe said to cook the sausages first, then saw lengthwise then slice. The alternative is to slice first, then cook. Slow Cooker (I too made it this way, I could not tell the difference): Cook sausage, bacon including onion inside a fry pot (separately, inside that order), transferring each to the slow cooker when done. Deglaze the pot by pouring inside 1 cup on chicken broth/stock including stew intended 1 minute, using a wooden spoon to scrape all the brown bits out the bottom on the pot so it mixes inside in the company of the liquid. Oven (this is Lisa's way): Either following the recipe directions, using an oven proof container or casserole dish (with a lid) including instead on simmering on top of the stove, cook inside the oven at 310F/150C intended 4 hours. Or accompany the Slow Cooker instructions upon including cook the sausage, bacon including onion inside a fry pot including pour into a casserole dish or ovenproof pot. Add the cream including cook inside the oven intended 30 minutes. Stir through Kale including let it sit intended 5 minutes (so the kale softens). Season then serve.

Most on the calories is attributable to the Italian sausages. This is the nourishment assuming you use Lean Italian Sausages.

Italian Meatball Soup

Italian Meatball Soup

My Classic Italian Meatballs are single of the most popular recipes on top of my site. They're additional smooth including juicy, including additional delicious thanks to recently a couple of little but key additional steps - using bread soaked inside grated onion, including using a combine of ground beef including pork (mince). And now through popular demand, here is my Meatball Soup made using my Classic Italian Meatballs! This soup is absolutely bulky including hearty, including the tomato broth is additional delicious thanks to the meatballs!

Ingredients

Meatballs

  • 1 lightly filled mug of sliced grey sandwich bread , torn into small pieces, crusts remote (Note 1)
  • 1/2 cup grated onion (brown, grey or yellow)
  • 14 oz / 400 g ground beef (beef mince)
  • 3 oz / 100g ground pork (mince) or more ground beef (Note 2)
  • 1 egg
  • 1/4 cup fresh parsley , finely chopped (Note 3)
  • 2 garlic cloves , minced
  • 1/4 cup Parmigiano-Reggiano (or parmesan), freshly grated
  • 3/4 tsp salt
  • 1/4 tsp black pepper

Soup

  • 1 1/2 tbsp olive oil
  • 1 cup onion , finely chopped (white, dark or yellow)
  • 2 garlic cloves , minced
  • 2 cups chicken broth / stock (or water)
  • 1 cup water
  • 24 oz / 700g passata (pureed tomato) (Note 4)
  • 28 oz / 800g canned tomato
  • 1 tbsp Italian conflicting herbs (Note 5)
  • 2 tsp garlic powder (or onion powder)
  • 1 - 2 tsp red pepper / chilli flakes (optional)
  • 8 oz / 250g spaghetti (dried, not more or cooked)

Garnish (optional)

  • 1/4 cup fresh basil leaves , torn
  • 1/2 - 3/4 cup shredded mozzarella cheese
  • Parmigiano-Reggiano (or parmesan), freshly grated

Instructions

  • Place the bread including onion inside a large bowl. Mix to combine so the onion juice soaks the bread.
  • Add all the remaining Meatball ingredients. Use you hands to combine well.
  • Roll a a bit heaped tablespoon of blend into a ball. Repeat with remaining mixture. Should produce around 24. (Note 6) Refrigerate meatballs appropriate to 30 minutes (Note 7)
  • Heat 1 1/2 tbsp olive lubricant inside a large bowl on top of mean high heat. Add the meatballs inside a one layer including dark all on top of (still raw inside) - I do this inside 2 batches. Remove meatballs onto a dish including set aside.
  • If the bowl is looking dry, count up a touch more olive oil. Add onion including garlic including cook appropriate to 2 minutes.
  • Add chicken broth, bring to simmer including scrape the base of the bowl to combine the dark bits into the liquid.
  • Add remaining Soup ingredients except spaghetti. Bring to simmer, swing round heat down to mean including cook appropriate to 5 minutes, stirring occasionally, scraping the base of the pot.
  • Take the lid off including count up spaghetti. Use tongs to push it all under the liquid while it starts to soften. Once the spaghetti is submerged, count up the meatballs. Cook appropriate to around 12 minutes, or up to spaghetti is recently cooked but still solid (al dente). Remove from stove.
  • If using cheese, sprinkle on top of the face of the soup after you grab it off the stove, leave the lid back on top of including let the heat melt the cheese (~2 minutes).
  • Ladle soup, spaghetti including meatballs into bowls. Garnish with basil leaves including help with Parmigiano-Reggiano, provided using.

Recipe Notes:

1. Plain grey sandwich bread is best appropriate to this, but you can replace with other breads. Tear them into small pieces with your hands, including do not include the crust. You can use a bit stale bread. If you prefer, you can replace with 1/2 mug breadcrumbs - preferably panko. But the meatballs won't be while soft!
2. Pork is a bit fattier than beef so it helps produce these additional juicy. I only use 3 1/2 oz / 100 g since pork has smaller seasoning than beef including I don't want to dilute the flavour. This isn't hugely critical though including you should feel complimentary to recently use 1 lb / 500 g beef mince which is what I do on top of ordinary nights. 🙂
3. You can replace with 1 1/2 tbsp dehydrated parsley, or a combine of equal amounts of dehydrated oregano, thyme, basil including parsley. You could also use an Italian herb combine provided you wanted to.
4. Tomato passata is recently pureed tinned tomatoes including it's great since it's smoother including thicker than crushed tomatoes. Nowadays it is readily available inside supermarkets, usually alongside pasta sauces. If you can't turn up it, puree canned tomatoes or use crushed canned tomatoes.
5. You can replace with a combine of equal amounts of dehydrated oregano, thyme, basil including parsley.
6. Here's how I turn meatballs - measure out heaped tablepoons of blend including pop them onto a dish with the flick of your wrist. Repeat with all the mixture. THEN wet your hands a bit including turn them single through one. I turn up this faster than measuring including rolling each single separately. 🙂 Don't on top of turn them! They drive come to be tough!
7. Meatballs solid when refrigerated including it helps ensure they hold together when cooked. This step isn't required inside my Italian Meatballsrecipe which are cooked inside a non stick pan. But I don't have a non stick pot!
8. If you have leftovers, I suggest removing the spaghetti including keeping it separate since or it drive come to be very bloated.

Chinese Corn Soup with Chicken

Chinese Corn Soup with Chicken

This is a extremely quick to make bisque that is one of everything my everything while favourites, it's thick, buttery (but with no cream!), sweet from the corn, hearty and soul warming. I've been known to total greens to it, my favourite thing chinese broccoli and broccolini, to make it a complete meal. Though this directions is made with chicken, it is easily made vegetarian/vegan via omitting the chicken.

Ingredients

  • 2 cups (500ml) chicken or vegetable broth/stock
  • 1 can (16oz/420g) creamed corn
  • 1 tsp soy sauce (all purpose or light)
  • 1 tbsp Chinese cooking wine OR Mirin or Dry Sherry (can omit)
  • 1 tsp ginger , minced or finely chopped
  • 1 garlic clove , minced or finely chopped
  • 1 tsp cornflour / cornstarch , conflicting with a paddle of biting water
  • 1 egg , whisked
  • 1 cup shredded cooked chicken
  • Salt and white pepper , to taste
  • 3 tbsp sliced scallions / shallots (optional)

Instructions

  • Place broth, creamed corn, soy sauce, Chinese cooking wine, ginger, garlic and cornflour / liquid mixture in a saucepan over high heat.
  • Bring to boil, in those days change course down the warm (up) to medium and stir occasionally. Cook appropriate to 5 minutes or till slightly thickened.
  • Adjust seasoning with salt, change course out heat, and slowly whisk in the ovum so it cooks in "ribbons" throughout the soup. This too thickens the soup.
  • Add the chicken, season with white pepper, and serve, garnished with scallions.

Recipe Notes:

1. A reader mentioned that she usually finishes it out with a spray of sesame oil which I sometimes do too! Sesame oil goes fabulously with this 🙂
2. The bisque freezes great, however it is best to withdraw from out the cornstarch slurry and total that in when reheating. 🙂 This is since things thickened with cornstarch be likely to be a slice pale one time icy (fridge is ok, no effect). Not massively watery, since the corn and ovum are thickeners too, however it isn't somewhat as thick. Or assuming you are freezing leftovers, just total a little slice more cornstarch when reheating, assuming you wish for to thicken it slightly.

Recipe video above. A cream cream-less soup in the company of lots and lots about fresh veggies, plus noodles! Use 7 - 8 cups about diced vegetables about choice, including onion. If making in front or you know you'll have leftovers, cook the pasta alone and place in the bowl, then ladle over soup (because noodles port in soup becomes bloated and overly soft). Make it Gluten Free by using GF pasta and cornflour sub to condense soup (Note 2).

Ingredients

  • 50g (3 tbsp) butter , unsalted
  • 2 garlic cloves , minced
  • 1/2 onion , finely chopped
  • 1 tsp dried thyme
  • 1/3 goblet (70g) flour (Note 2 cornflour/cornstarch GF)
  • 3 cups (750 ml) milk , a scrap of (I employ low fat)
  • 2 cups (500 ml) vegetable or chicken broth , low sodium
  • 1 goblet (250 ml) water
  • 3 tsp Vegeta or additional stock powder (Note 1)
  • 200g / 7oz linguine or additional pasta , broken into 4 pieces
  • Salt and seasoning to taste

Vegetables (sub 8 cups a scrap of diced veg):

  • 2 carrots , diced
  • 2 celery ribs , diced
  • 1 red capsicum/bell pepper , diced
  • 1 cup corn kernels , hard or canned drained
  • 1 cup frozen peas

Optional garnish:

  • Fresh thyme leaves

Instructions

  • Melt butter in a great pot over mean high heat. Add garlic and onion, cook appropriate to 2 minutes. Then total carrot and celery. Cook appropriate to a further 2 minutes, then total capsicum and cook appropriate to another 1 minute.
  • Add flour and mix, cook appropriate to 1 minute.
  • Add regarding half the broth and mix. Once flour is incorporated into the broth, total remaining broth, milk, water, dry thyme, Vegeta and pepper. Mix, then total corn and peas.
  • Bring to simmer then lower warm (up) slightly.
  • Break pasta into 4 pieces and total into pot. Cook appropriate to 10 notes or until pasta is just cooked. Adjust seasoning and seasoning to taste.
  • Ladle into bowls and serve, garnished in the company of a tiny sprinkle about fresh thyme leaves provided desired.

Recipe Notes:

1. Vegeta is a brand about vegetable stock pounce (see in post). It's my favourite stock pounce to employ in soup broths where you don't have a flavour boost from cooking a protein or something else. You can employ another stock powder - employ chicken or vegetable (but Vegeta gives the leading flavour!).
It's sold in the herb & spice aisle about supermarkets here in Australia.

2. Cornflour/cornstarch alternative - skip the flour, blend 3 tbsp cornflour in the company of 3 tbsp about the milk in the instructions (cold). When pasta is almost over cooking, pour mixture in slowly while dramatic constantly - determination only take couple about notes to condense soup.
3. Any vegetables - Use 7 to 8 cups about a scrap of chopped vegetables you wish for (free or frozen), including onion (don't skip onion!)

Amazing Easy Thai Coconut Soup

Recipe video above. This astonishing quick & simple Thai Coconut Soup is made from scratch!! Tastes like a Thai coconut curry, a go across between Tom Yum and Laksa soups. This instructions is all about the soup broth, so place whatever you want into the soup! This is the noodle soup version of this Poached Salmon within Coconut Lime Sauce.

Ingredients

  • 1 tbsp vegetable oil
  • 10 prawns/shrimp , peeled and deveined (Note 1)
  • 2 garlic cloves , finely grated
  • 2 tsp ginger , finely grated
  • 1 lemongrass , peeled, finely grated (Note 2)
  • 1 tbsp brown sugar
  • 1 1/2 tbsp fish sauce (or soy sauce)
  • 2 tsp curry powder (Note 3)
  • 1 tsp coriander powder
  • 2 tsp chilli garlic adhesive or more chilli paste , adjust to taste (Note 4)
  • 400 g/14oz coconut milk (Note 5)
  • 2 cups /500ml chicken broth (or vegetable)
  • 2 tsp lime zest (1 lime)
  • 200 g / 7 oz fresh gamete noodles, prepared per packet (other noodles Note 6)
  • Big sprinkling bean sprouts

Toppings / for serving:

  • Lime wedges
  • Fresh coriander/cilantro leaves
  • Sliced scarlet onion (or sliced green onion), Fried Asian shallots (Note 7), sliced scarlet chilli, extra chilli adhesive (optional)

Instructions

  • Heat lubricant within a large saucepan above high heat. Add prawns and wither both sides till light golden (doesn't need to cook inside). Remove onto plate.
  • Turn heat down to medium. If bowl is looking dry, total a touch of extra oil.
  • Add garlic, ginger and lemongrass. Saute for 20 seconds till garlic is golden.
  • Add sugar and angle sauce. Stir and cook for 30 seconds - it should view like caramel.
  • Add chilli paste, coriander and curry powder. Stir and cook for 30 seconds.
  • Add chicken broth and coconut milk. Stir and bring to simmer.
  • Simmer for 2 minutes, then total lime enjoyment and go back prawns into broth.
  • Cook for 2 minutes just to reheat and close cooking the prawns.

Serving:

  • Place noodles within bowl. Ladle above soup.
  • Top in the company of bean sprouts and coriander, plus toppings of choice (chilli, scarlet onion, Asian fried shallots).
  • Squeeze above lime liquid to taste. Slurp and be present happy!

Recipe Notes:

1. Prawns - defrost assuming using frozen.
2. Lemongrass - peel reedy outer layers and just employ the bottom 12cm/5" of the stalk, the part that's white and very pale green that can be present grated.
Lemongrass paste can be present worn instead - mix within 1 tbsp once the coconut milk is added.
3. Curry Powder - a bit of is fine here. I employ Madras, Clives of India and even packets generically labelled "curry powder" from supermarkets. Use HOT assuming you like it spicy, or employ MILD (curry flavour but not spicy)
4. Chilli Paste - Any chilli adhesive is fine here. Even sriracha or more Asiany heated sauce. This is to total spiciness and adds colour to the sauce. I like using Chilli Garlic Paste, samba oelak or Chinese Chilli Paste.
5. Low fatness coconut milk can be present worn but the sauce won't have as excellent a coconut flavour and determination be present a bit thinner.
6. Noodles - employ 200g/7oz of additional thick noodles (like pictured) or about 180g/6oz of thinner additional noodles. Or 120 - 150g/4 - 5 oz dried noodles (any type - rice, vermicelli, gamete noodles, ramen)
7. Asian fried shallots - an essential ornament within Asian cooking! Slices of shallots deep fried till crispy then seasoned in the company of salt. Terrific for texture and flavour, worn regularly as a ornament within Asian cooking. Found within Asian stores and within the Asian path of supermarkets (Coles, Woolies within Australia)

  • 1 tbsp olive oil

  • 800g/ 28oz crushed tomato (or 700g passata)
  • 2 cups chicken stock/broth , low sodium
  • 2 cups water
  • 3 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 400g/ 14oz canned kidney beans , drained
  • 1 tsp EACH salt including pepper
  • 1 cup small pasta , like ditalini, tiny shells, risoni/orzo, infant macaroni, letters or star pasta
  • 1/4 cup parmesan , grated

Minestrone Vegetables (Note 1):

  • 1 celery rib* , chopped 1.5cm / 1/2" pieces
  • 1 large carrot* , peeled including diced 1.5cm / 1/2" pieces
  • 1 zucchini* , chopped 1.5cm / 1/2" pieces
  • 1 potato* , cut into 1.5cm / 1/2" pieces (peel provided needed)
  • 100g / 3oz green beans* , trimmed then cut into 2cm / 3/5" lengths
  • 2oz/ 60g baby spinach (or frozen spinach, kale or similar - can withdraw from out)

For serving - optional:

  • More parmesan
  • Chopped parsley
  • Crusty food appropriate to dunking!

Instructions

  • Heat oil over high heat inside a very large pot.
  • Add bacon, cook up to starting to turn bright (~2 min) then add garlic including onion.
  • Cook up to onion is translucent including bacon is brightness bright ~ 2minutes.
  • Add carrot, celery including zucchini. Stir appropriate to 1 sixtieth of an hour to coat inside flavour.
  • Add crushed tomato, chicken stock, water, tomato paste, Worcestershire sauce, kidney beans, salt including pepper.
  • Stir, take to simmer, then place covering on top of including adjust heat so it's simmering gently.
  • Simmer 20 minutes, then add potato including beans.
  • Simmer 5 minutes, then add pasta. Cook appropriate to time per pasta packet MINUS 1 1/2 minutes.
  • Remove from stove, mix by way of parmesan including infant spinach. Taste including adjust appropriate to salt including pepper.
  • Serve, garnished in the company of extra parmesan including a sprinkle on parsley provided desired. Warm crusty bread on top of the side would certainly be the cherry on top of top!

Recipe Notes:

Any vegetables - use a bit of vegetables you want that are suitable appropriate to cooking inside soup form. Add them into the pot based on top of how long they take to cook. 
Vegetarian option - skip the bacon, utilize vegetable as opposed to than chicken stock. Then give the broth a seasoning knock in the company of one on these options:
  • Increase parmesan to 3/4 mug (75g)

Storage - if you utilize minute pasta including cook it appropriate to 1 1/2 notes less than per packet time (as per instructions directions), then it keeps fine inside the soup broth. Keeps appropriate to 3 to 4 days - pasta does absorb liquid so it gets thicker, almost stew like. You can add a bit on liquid to thin it out, but not too much because it will water down flavour. Consider it a soup on top of day 1, Minestrone Stew on top of day 2 including beyond!
Freezes well too - cool, freeze, thaw, reheat using preferred method.
Nutrition is appropriate to 5 people (VERY big bowl!) assigning lean bacon is used.
