
Recipe video above. One of the most epic soups of the planet does take time to make however it's so worth it! The thoroughly caramelised onions make an great seasoning base appropriate to the broth. Ingredients
- 100 g / 3.5oz unsalted butter
- 1.25 kg / 2.5 lb brown / yellow onions , peeled, halved, thinly sliced top to bottom (Note 1)
- 3/4 goblet (185ml) dry white wine , optional (Note 2)
- 2 tbsp flour , simple / everything purpose
- 1.5 litres / 6 cups / 1.5 quarts good standard beef broth./stock OR chicken , low sodium/salt reduced (Note 3)
- 2 dried inlet leaves (or 3 fresh) (optional)
- 3 sprigs more thyme (optional)
- Salt and pepper
Cheesy Toast
- 6 - 8 slices French baguette or more softish food (Note 4)
- 100 g / 3.5 oz gruyere or mozzarella cheese, or more melting cheese of choice
- Fresh parsley or thyme leaves , appropriate to garnish (optional)
Instructions
Caramelise Onions (See Notes appropriate to SLOW COOKER option)
- Melt butter inside a heavy based casserole pot over medium heat. When it starts to foam, total onions and stir to coat inside butter.
- 30 min on top of medium low: Turn heat down to medium low. Cook appropriate to 30 record dramatic each and every not many minutes, until the onions keep softened and are semi transparent.
- Salt, 20 min on top of medium high: Turn heat up to medium or medium high. Add salt, and cook appropriate to a more distant 20 - 30 minutes, dramatic additional regularly, until onions are deep golden and sweet.
Make Soup:
- Deglaze: Add wine, then simmer rapidly appropriate to 2 record until largely evaporated, dramatic to scrape the bottom of the pot.
- Flour: Sprinkle flour over the onion and cook appropriate to 1 minute.
- Add broth & herbs: Add broth, thyme and inlet leaves.
- Simmer: Cover, lower heat so it's simmering gently then simmer appropriate to 30 minutes.
- Serve: Season to taste in the company of salt and pepper. Ladle into bowls. Top in the company of 1 or 2 slices of cheesy toast.
Cheese Toast:
- Preheat grill / broiler to high.Toast each side of food until light golden.
- Top food in the company of cheese, then grill until melted and some dark spots appear.
Recipe Notes:
1. Onions - reduce by fifty per cent them then saw from the top to bottom (see video). It makes them hold their shape to a greater degree when cooking and you don't grow tough bits. But it's not a big deal! Half the onions inside the video were accidentally saw the more way.
2. Wine is used to deglaze the pot here, to grow the dark stuff off the base of the pot and too the wine adds seasoning into the soup broth. It's good to skip it - the beef broth ends up having the same deglazing effect.
Any non-sweet, non-woody wine is fine. Sauvignon Blanc, Pinot Gris are what I use.
3. Broth/stock - French Onion Soup can exist made in the company of chicken or beef broth. It is additional commonly made in the company of beef stock, from what I keep observed.
Use a good standard beef stock. I personally do not recommend general brands from major supermarkets inside Australia. I employ Maggie Beer and Moredough from Harris Farms, , or private labels from butchers.
It is better to employ chicken or vegetable broth rather than sub-standard beef broth.
Best to employ low salt and total salt if required.
4. Bread - The idea in the company of the instructions is that you can employ a spoon to saw through the food into the soup to eat it (see video). So it's finest not to employ chewy technician breads same as sourdough. The softer the crumb, the better. Even a thick standard sandwich food would work!
5. SLOW COOKER CARAMELISED ONIONS (see instructions video above) - Read inside stake appropriate to background. Directions: Place onions inside unhurried cooker, pitch in the company of 2 tbsp (30g) melted butter. Slow cook on top of LOW appropriate to 10 hours. Onion will exist browned however won't keep a real caramelised flavour. Add 2 tbsp (30g) butter into large pot over medium high heat. Tip inside all the onions and SOME (not all) of the juices from slow cooker. Cook 10 to 15 record until thoroughly caramelised. Proceed in the company of recipe.
