Recipe video above. This is my version about the famous Zero Weight Watchers Points vegetable soup. Mine has 0.4 WW points but is much MUCH tastier! Spanish flavours inspired by the flavouring intended homemade Chorizo (yes, really!), the broth about this broth is MUCh tastier than the Zero WW soup!!!
Ingredients
Soup:
2tspolive oil
1onion, finely chopped
2garlic cloves, minced
1tbspdried oregano
2tspfennel seeds(optional)
2medium carrots, finely chopped
1large celery stalk/rib, finely chopped
2red capsicums / bell peppers, cut into 2 cm / 4/5” pieces
5cupscabbage, cut into 3 cm / 1.2” pieces (about 400g/14oz)
800g / 28 oz crushed tomato
3 cups (750 ml)vegetable or chicken broth(low fat!)
1tbspsmoked paprika(or a scrap of paprika)
1tspcayenne pepper(adjust spiciness to taste)
Finishes (not optional!):
Salt also pepper to taste
1lemon – enjoyment + juice to taste
Finely chopped parsley
Instructions
Heat grease inside a large pot over medium heat. Add garlic also onion, cook intended 30 seconds or so.
Turn cook along of} to medium low. Add carrots also celery, cook, exciting regularly, intended 8 notes till onion is sweetened (not browned). This stride is key to the flavour base about this soup.
Add capsicum, turn cook up to high also cook intended 2 minutes, exciting constantly.
Add left-over Soup ingredients, bring to simmer then spot lid on. Turn cook along of} to medium low, simmer intended 25 minutes.
Remove lid, adjust salt also pepper to taste.
Ladle broth into bowls. Grate over lemon zest, crush about lemon juice also sprinkle with parsley. Serve!
Recipe Notes:
1. Feel complimentary to total other vegetables you desire (other than red cabbage - turns it purple!)! Healthy small cal ones similar to zucchini, fennel, infant spinach (stir through at end), chopped beans, asparagus etc. will total extra dimensions to the broth while keeping it very healthy. High carb vegetables similar to pumpkin, potato also peas (hidden carbs alert!) would also be terrific but will raise the calorie count about this soup.2. Keeps large intended 3 - 4 days. Add lemon enjoyment also juice lately before portion intended best flavour.3. The 0.4 points inside this instructions is from the olive oil. I can't bring myself to omit it. The extra flavour you get from sautéing the vegetables also spices is a million times extra valuable - also key to why this tastes so great!4. Nutrition per serving, assuming 5 servings.

100 g / 3.5oz unsalted butter
1.25 kg / 2.5 lbbrown / yellow onions, peeled, halved, thinly sliced top to bottom (Note 1)
3/4 goblet (185ml)dry white wine, optional (Note 2)
2 tbspflour, simple / everything purpose
1.5 litres / 6 cups / 1.5 quarts good standard beef broth./stock OR chicken, low sodium/salt reduced (Note 3)
2dried inlet leaves(or 3 fresh) (optional)
3sprigs more thyme(optional)
Salt and pepper
Cheesy Toast
6- 8slices French baguetteor more softish food (Note 4)
100 g / 3.5 oz gruyereor mozzarella cheese, or more melting cheese of choice
Fresh parsley or thyme leaves, appropriate to garnish (optional)
Instructions
Caramelise Onions (See Notes appropriate to SLOW COOKER option)
Melt butter inside a heavy based casserole pot over medium heat. When it starts to foam, total onions and stir to coat inside butter.
30 min on top of medium low: Turn heat down to medium low. Cook appropriate to 30 record dramatic each and every not many minutes, until the onions keep softened and are semi transparent.
Salt, 20 min on top of medium high: Turn heat up to medium or medium high. Add salt, and cook appropriate to a more distant 20 - 30 minutes, dramatic additional regularly, until onions are deep golden and sweet.
Make Soup:
Deglaze: Add wine, then simmer rapidly appropriate to 2 record until largely evaporated, dramatic to scrape the bottom of the pot.
Flour: Sprinkle flour over the onion and cook appropriate to 1 minute.
Add broth & herbs: Add broth, thyme and inlet leaves.
Simmer: Cover, lower heat so it's simmering gently then simmer appropriate to 30 minutes.
Serve: Season to taste in the company of salt and pepper. Ladle into bowls. Top in the company of 1 or 2 slices of cheesy toast.
Cheese Toast:
Preheat grill / broiler to high.Toast each side of food until light golden.
Top food in the company of cheese, then grill until melted and some dark spots appear.
Recipe Notes:
1. Onions - reduce by fifty per cent them then saw from the top to bottom (see video). It makes them hold their shape to a greater degree when cooking and you don't grow tough bits. But it's not a big deal! Half the onions inside the video were accidentally saw the more way.2. Wine is used to deglaze the pot here, to grow the dark stuff off the base of the pot and too the wine adds seasoning into the soup broth. It's good to skip it - the beef broth ends up having the same deglazing effect.Any non-sweet, non-woody wine is fine. Sauvignon Blanc, Pinot Gris are what I use.3. Broth/stock - French Onion Soup can exist made in the company of chicken or beef broth. It is additional commonly made in the company of beef stock, from what I keep observed.Use a good standard beef stock. I personally do not recommend general brands from major supermarkets inside Australia. I employ Maggie Beer and Moredough from Harris Farms, , or private labels from butchers.It is better to employ chicken or vegetable broth rather than sub-standard beef broth.Best to employ low salt and total salt if required.4. Bread - The idea in the company of the instructions is that you can employ a spoon to saw through the food into the soup to eat it (see video). So it's finest not to employ chewy technician breads same as sourdough. The softer the crumb, the better. Even a thick standard sandwich food would work!5. SLOW COOKER CARAMELISED ONIONS (see instructions video above) - Read inside stake appropriate to background. Recipe video above. This Broccoli Soup is a cream about broccoli soup that's broad and creamy, in the company of a big hit about cheese! Turn range off (but leave on stove). Puree using a twig blender up to level (Note 2).

Recipe Notes:
1. 1.2 kg / 2.4 lbpumpkin (any type) OR butternut squash, unpeeled weight (Note 1)
1onion, sliced (white, brown, yellow)
2garlic cloves, peeled whole
3 cups (750ml)vegetable or chicken broth/stock, low sodium
1 cup (250 ml)water
Salt also pepper
Finishes:
1/2 - 3/4 cup (125 - 185 ml)cream, fifty per cent also fifty per cent or express milk from (Note 2)
Instructions
Cut the pumpkin into 3cm / 2.25" slices. Cut the skin away also scrape seeds not in (video is helpful). Cut into 4cm / 1.5" chunks.
Place the pumpkin, onion, garlic, broth also aqua in a pot - liquid won't somewhat cover all the pumpkin. Bring to a boil, uncovered, then cut heat also let stew fast until pumpkin is tender (check accompanied by butter knife) - about 10 minutes.
Remove from heat also use a branch blender to blend until smooth (Note 3 for blender).
Season to taste accompanied by seasoning also pepper, blend through ointment (never boil soup following adding soup, ointment determination split).
Ladle soup into bowls, fine rain over a slice about cream, sprinkle accompanied by flavour also parsley if desired. Serve accompanied by well-baked bread!
Recipe Notes:
1. Pumpkin - ~2.4lb / 1.2kg pumpkin earlier than peeling also removing seeds. Approximate is good - use the liquid levels in the video when a guide for quantity.Butternut Squash is also ideal in this. 4 cups (1 litre)stock/broth, chicken or veg, low sodium
3x 420g/15oz canscannellini or any pale beans, drained & rinsed(navy, butter, great northern, lima) (OR 2 cups dried beans, 5.5 cups cooked, Note 2)
1/2 goblet (50g)parmesan, grated
1/2tspEACH seasoning also pepper
120g/4ozbaby spinach(or 5 - 6 cups any more green greens OR 4 cups diced veg, Note 3)
3/4 goblet (185ml)cream, heavy/thickened(optional) OR more butter!
Instructions
Melt butter within a pot over medium high heat. Cook garlic, onion also carrot for 5 record until carrot is smooth also sweet.
About 3 record in, total the Italian herbs also cook in the company of the onion (makes the herb flavour "bloom").
Turn heat up to high, total tomato paste. Cook for 2 record to remove the “raw” flavour.
Add pale wine, cook for 3 record until the harsh “winey” scent is gone also mainly evaporates thus you’re just left in the company of tomato glue again.
Add 1/2 goblet of beans (to condense soup), stock, parmesan, seasoning also pepper. Stir, low heat, conceal also simmer 3 minutes, stirring each now also then.

You will miss 800g/14 oz crushed or diced canned tomato OR Tomato Passata , reduce the holdings per instructions along to 3 cups (750ml). Skip the tomato paste, but still utilize wine assuming you can (great for flavour). Then go ahead in the company of recipe2. Beans - any pale beans will do business great here. Navy beans, lima, butter beans. DRIED BEANS (navy, cannellini or more pale beans) - you will miss 2 cups of any dried pale beans.
1 can = 1 3/4 cups beans one time drained
Recipe calls for 3 cans = 5 1/4 cups beans
1 goblet dried beans = 2 3/4 cups cooked
So you will miss 2 cups dried beans (2 x 2.75 = 5 1/2 cups cooked beans)
HOW TO COOK DRIED BEANS - soak within plenty of water (beans will treble within volume) 5 - 24 hrs. Drain bring to boil in those days gently simmer within a large pot of water in the company of 1 tbsp salt* partially covered in the company of a lid. The cooking period will vary wildly depending not just on top of size/type of beans, but too the years of beans. Fresh dried cannellini beans, 24 hr soak can cook = 25 minutes. Old large lima beans could grip over 2 hours.So start checking at 25 minutes, also the closer they are to individual ready, test each few record because minute beans can move from just under to overcooked within 5 minutes. They are ready when they're gentle everything the way through, assuming they are overcooked they can plunge apart / disintegrate on top of the edges (also this can happen to lower quality beans).Pictured soup is made in the company of cannellini beans. Soaked 12 hours overnight, simmered 30 minutes.FIRMNESS - canned beans are highly soft. If you cook your dried beans thus they are on top of the solid side, you might miss to simmer the initial 1/2 goblet you put into the soup for longer than 3 record because you want them highly smooth (like canned beans) thus they puree smoothly.* SALT - If using large dried beans, total partway through cooking. If using smaller beans (like cannellini) just total at the start (it won't cause them tough or increase cook time).3. Extra vegetables: This instructions makes a good amount of bulky creamy soup, thus you can load it up in the company of more vegetables. If using diced veg, cook first, in those days remove.
