No Chop Roast Butternut Pumpkin / Squash Soup

A creamy sexy pumpkin soup in the company of extra intense pumpkin flavours, made without chopping the pumpkin! Ingredients

  • 1 head of garlic
  • 2 tbsp olive oil
  • 3/4 tsp salt
  • Black pepper
  • 3 - 4 cups milk (of choice)

Garnish

  • Cream for drizzling
  • Finely chopped parsley
  • Garlic food for dunking

Instructions

  • Preheat range to 180C/350F.
  • Place pumpkin cut margin up on scorching tray in the company of onion including garlic. Drizzle in the company of oil, sprinkle in the company of salt including pepper. Wrap garlic within foil.

3. It was brought to my attention via a taste tester that Donna Hay recently shared a pumpkin soup using the same roasting method but transfers it all into a container to puree. I did not get this idea from the Donna Hay recipe, but I thought it was worth noting the similarity because I think this is quite a unique way to make pumpkin soup including people may wonder. 🙂 I think I got the idea from Jamie Oliver (years ago) when he made a roast veg mash this way.

Healthy Creamy Zucchini Soup

Healthy Creamy Zucchini Soup

You don’t need loads of ointment or stable a roux to make a milky zucchini soup. The natural texture of the zucchini flesh whizzes up beautifully to be a silky, milky texture.   • 3/4 mug / 185 ml cream, weighty / thickened (or light or add a great knob of butter instead) (Note 2)
  • 1 mug / 250 ml milk , any fat %, or more cream

Garnish:

  • Cream , appropriate to swirling
  • Finely shredded parmesan

Instructions

  • Heat lubricant within a great pot above average tall heat. Add garlic and onions, and cook appropriate to 3 - 4 minutes up to they are light golden brown.

Recipe Notes:

Wonton Soup

Recipe VIDEO above. Homemade wontons are amazing! No fillers, just real ingredients inside the filling. Terrific standby freezer meal!

Ingredients

  • 50 - 60 wonton wrappers (Note 1)

Wonton Filling

  • 200 g / 7 oz lean pork mince (ground pork)
  • 200 g / 7 oz peeled prawns / shrimp , abruptly chopped
  • 1 tbsp ginger , finely grated (1.5" / 3cm piece)
  • 2 shallots / verdant onions , finely chopped (5 tbsp)
  • 1 tbsp light soy sauce (Note 2)
  • 2 tbsp Chinese cooking wine (Shaoxing wine) (Note 3)
  • 1/2 tsp salt
  • 2 tbsp sesame oil, toasted (Note 4)

Broth (for 2 servings)

  • 3 cups / 750 ml chicken broth (Note 5)
  • 2 garlic cloves , smashed (6)
  • ⅓" / 1 cm piece about ginger , sliced (optional, yet highly recommended)
  • tbsp light soy sauce (Note 2)
  • 2 tsp sugar (any)
  • tbsp chinese cooking wine (Note 3)
  • ¼ - ½ tsp sesame oil

To Serve

  • Shallots / scallions , finely chopped
  • Bok choy , quartered, or Chinese broccoli saw into 10cm /4" lengths (optional)
  • 40 - 50 g / 1.5 - 1.75 oz dried egg noodles per person , (optional) (8)

Instructions

Wontons:

  • Place Filling ingredients inside a bowl. Use a potato masher to mash until fairly level - on 20 mashes. Don't change course the prawn into a complete paste, small chunks are good.

Wrapping (See photos including video):

  • Use My Way (better Wonton Soup experience!) or the Asian Grocery Store Way (easier to pack for freezing).
  • Lay Wontons supported by work surface. Use 2 teaspoons to put the Filling supported by the wontons. Work inside batches about 5 provided starting out, up to 15 or 20 provided confident. Brush 2 edges with water. Fold to seal, pressing out air. Brush water supported by one corner including bring corners together, pressing to seal.
  • Place wrapped wontons into a vessel with a lid as you work (so they don't dry out).

Cooking/Freezing:

  • To cook: bring a big bowl about water to boil. Place wontons inside water including cook for 4 record or until they float. Remove with slotted spoon straight into helping bowls. Ladle on top of broth.
  • To freeze: Freeze uncooked inside airtight containers. Cook from hard for 6 to 8 minutes. IMPORTANT: Do not freeze provided you made this with defrosted hard prawns. (Note 11)

Broth:

  • Place Broth ingredients inside a saucepan on top of high heat. Add white ends about scallions/shallots provided leftover from Wonton filling. 
  • Place lid on, bring to simmer in those days reduce to average high including simmer for 5 - 10 record to allow the flavours to infuse. Pick garlic including ginger out earlier than using.
  • If using vegetables, blanch inside the soup broth including spot inside helping bowl.

Assemble Soup:

  • Prepare noodles according to packet directions (if using noodles). Place inside helping bowl with cooked wontons including blanched vegetables.

Recipe Notes:

1. Wonton Wrappers - You can find Wonton Wrappers inside the refrigerator part about Woolworths including Coles inside Australia inside the part where additional noodles are sold (usually next to the pasta). 4. Sesame Oil - This sounds like a lot, yet trust me, it tastes incredible! Use toasted (brown oil) for better flavour, not untested (yellow).
5. Chicken broth - If you are at the Asian store, grab a couple about cans about Asian chicken broth. It's more yellow including tastes a not much "cleaner" than Western outlet bought chicken broth. It is what I second-hand inside the photos.

French Onion Soup

French Onion Soup

Recipe video above. One of the most epic soups of the planet does take time to make however it's so worth it! The thoroughly caramelised onions make an great seasoning base appropriate to the broth. Ingredients

  • 100 g / 3.5oz unsalted butter

  • 3/4 goblet (185ml) dry white wine , optional (Note 2)
  • 2 tbsp flour , simple / everything purpose
  • 1.5 litres / 6 cups / 1.5 quarts good standard beef broth./stock OR chicken , low sodium/salt reduced (Note 3)
  • 2 dried inlet leaves (or 3 fresh) (optional)
  • 3 sprigs more thyme (optional)
  • Salt and pepper

Cheesy Toast

  • 6 - 8 slices French baguette or more softish food (Note 4)
  • 100 g / 3.5 oz gruyere or mozzarella cheese, or more melting cheese of choice
  • Fresh parsley or thyme leaves , appropriate to garnish (optional)

Instructions

Caramelise Onions (See Notes appropriate to SLOW COOKER option)

  • Melt butter inside a heavy based casserole pot over medium heat. When it starts to foam, total onions and stir to coat inside butter.
  • 30 min on top of medium low: Turn heat down to medium low. Cook appropriate to 30 record dramatic each and every not many minutes, until the onions keep softened and are semi transparent. 
  • Salt, 20 min on top of medium high: Turn heat up to medium or medium high. Add salt, and cook appropriate to a more distant 20 - 30 minutes, dramatic additional regularly, until onions are deep golden and sweet.

Cheese Toast:

Recipe Notes:

1. Onions - reduce by fifty per cent them then saw from the top to bottom (see video). It makes them hold their shape to a greater degree when cooking and you don't grow tough bits. But it's not a big deal! Half the onions inside the video were accidentally saw the more way.

Any non-sweet, non-woody wine is fine. Sauvignon Blanc, Pinot Gris are what I use.
3. Broth/stock - French Onion Soup can exist made in the company of chicken or beef broth. It is additional commonly made in the company of beef stock, from what I keep observed.
Use a good standard beef stock. I personally do not recommend general brands from major supermarkets inside Australia. I employ Maggie Beer and Moredough from Harris Farms, , or private labels from butchers.
It is better to employ chicken or vegetable broth rather than sub-standard beef broth.

Chicken Stock

  • 2 cups (500 ml) chicken holdings / broth

  • 3 chicken drumsticks (Note 1)

Laksa Broth

  • 1 1/2 tbsp oil
  • 2 garlic cloves , minced
  • 2 cm / 4/5" piece about ginger , finely grated
  • 1 lemongrass , pale part grated, (Note 2)
  • 2 birds optic chillis , finely chopped (Note 3)
  • 1/2 goblet (175g) laksa paste (Note 4)
  • 400g / 14 oz can coconut milk (Note 5)
  • 2 tsp fish sauce (sub soy)

Noodles + Toppings

  • 50g / 1.5 oz vermicelli noodles , dried
  • 100g / 3.5oz hokkien noodles (optional, Note 6)
  • 80g / 2.5 oz bean sprouts
  • 80g / 2.5 oz tofu puffs , cut inside half (Note 7)

Laksa Chilli Sauce (Note 8)

  • 1/2 tsp sugar , white
  • 1 1/2 tsp soy sauce , light or all purpose
  • 1/2 garlic clove , minced
  • 1 1/2 tsp Laksa paste (Note 4)
  • 1 tbsp Sriracha sauce , or additional chilli sauce
  • 1 tbsp chilli paste from jar , or extra Sriracha
  • 1 tbsp vegetable oil (any unadorned oil)

Garnishes

  • Fresh coriander / cilantro (recommended)
  • Lime wedges (recommended)
  • Crispy fried shallots , voluntary (Note 8)
  • Finely sliced red chilli , voluntary

Instructions

Chicken Stock

  • Place Chicken Stock ingredients inside a average saucepan over high heat. Bring to simmer, then reduce to average high.

Recipe Notes:

Recipe video above. A simple, delicious Chinese noodle bisque in the company of a broth that you'd swear came from your favourite Chinese restaurant! Ingredients

Broth

  • 3 cups chicken stock/broth, low sodium (Note 1)
  • 2 garlic cloves , smashed (Note 2)
  • 1.5 cm / 1/2" ginger piece, cut into 3 slices (optional, yet very recommended)
  • 1 1/2 tbsp light soy sauce , or normal all purpose soy sauce (Note 3)
  • 2 tsp sugar (any)
  • 1 1/2 tbsp chinese cooking wine (Note 4)
  • 1/4 - 1/2 tsp sesame oil , toasted (optional) (Note 5)

Toppings & Noodles

  • 180g / 6oz fresh gamete noodles (Note 6)
  • 2 large bok choy or additional vegetables of choice (use a bit of blanchable veg - Note 7)
  • 1 cup shredded cooked chicken (or additional protein of choice)
  • 1 scallion / shallot , leafy part one finely sliced (optional garnish)

Instructions

  • Place Broth ingredients within a saucepan over towering heat. Place lid on, bring to stew then reduce to average and stew appropriate to 8 - 10 minutes to allow the flavours to infuse.
  • Meanwhile, cook noodles according to packet directions.
  • Cut bok choys within half (for small / medium) or quarter (for large). Wash thoroughly.
  • Either cook the bok choi within the broth within the bisque broth OR noodle cooking water appropriate to 1 min (if noodles required boiling).
  • Pick garlic and ginger out of soup.
  • Place noodles within bowls. Top in the company of chicken and bok choy. Ladle over soup, garnish in the company of leafy onions. Great served in the company of chilli paste or fresh chillis.

Recipe Notes:

1.  Chicken stock/broth - recently outlet bought chicken broth is fine here, yet get a good quality single (Campbells within Australia is my favourite brand). Don't employ chicken stock powder in the company of burning water appropriate to this directions - the flavour is also chickeny.

6. Noodles: Use a bit of you want, fresh or dry yet if using less, employ less. Here's a guide of amount of noodles per serving:
  • Fresh noodles, thin (ie from fridge section, this is what I use) - 90g / 3 oz per serving
  • Fresh noodles, wide and flat (like thick Thai rice noodles) - 150g/ 5 oz per portion (much denser, so you need more)
  • Dried noodles, pasta (yes, really!) - 60g / 2 oz per serving
  • Ramen - 1 pack / "cake" per person
Prepare according to packet directions - do not add into the broth (it sucks up lots of the broth). 
7. Toppings: Cook proteins separately to stay things simple. My "go to" is shredded cooked chicken because I stay little bags within the freezer (poaching keeps it juicy). Egg is and great - recently sweep it lightly, spill it within and sweep to create gamete "ribbons" same as within Hot & Sour Soup and Chinese Corn Soup. Chinese BBQ Pork Slices is fabulous (I order it at restaurants on soup), yet I never have leftover when I make it.
Vegetables - cut and cook within either noodle cooking water (if noodles crave cooking) otherwise if the noodles recently crave soaking, then cook the vegetables within the broth. Put the vegetables that take the longest to cook within initial (like broccoli), and delicate ones previous (like beansprouts).
Veggie suggestions - toppings commonly found on Chinese noodle/ wonton soups:
  • Any Chinese veggies (bok choy/buk choi/pak choi, gai lan/Chinese broccoli, choy sum). Cut Bok Choy into half or quarters lengthwise (pictured / video), appropriate to additional veg, saw into batons about 5cm / 2" long
  • Carrots - sliced on the diagonal
  • Bean sprouts
  • Green beans
Other veg - not common at Chinese restaurants, yet works great!
  • zucchini (sliced)
  • green beans cabbage (thick slice)
  • asparagus, broccoli / broccolini and cauliflower,
  • any additional vegetable that can exist boiled.
8. Nutrition is per serving, assuming 1/4 tsp of sesame oil is used. The nutrition can exist substantially enhanced through adding more vegetables! Reduce sodium stable more distant through using low sodium soy sauce.
